Going with my old reliable Syrah grapes - last year i mixed the Syrah with Valdespena and it drowned out the syrah's subtle tastes like coffee-chocolate-almonds etc - so i won't be mixing that again that's for sure.

After i crush the grapes today i let it sit for about a week in my garage with careful observation of course then into my cellar.

that's why i have to hurry finishing relining my cellar's walls floor and ceiling with a special waterproof cement coating b4 the week is out or i'm screwed affraid

Kellie dont your nurse-biker friend make the wine too - more than me and better too if i remember right? ) Smile

well i finished relining the cellar with the concrete and painted the shelfs. It looks brand new) Now just waiting for the wine must to stop boiling-fermenting before transferring to my cold cellar.

i mentioned this last year or so about black widow spiders hitching a ride in the cali grapes - well it happened here again just now. i don 't know how he saw that tiny spider if it was me I would have just crushed it into the must to give the wine kick Evil or Very Mad

That seemed to be excessive coverage for just a black widow. I've had a few around the house - I taught my daughters what they were and how to recognize them.
